Nestled beneath an 18th-century palazzo, this atmospheric space was once a Roman cistern from the 1st century AD, now beautifully restored and transformed into a refined tasting venue adorned with antique furnishings and timeless charm.

The Rome Fabullus Tasting Menu includes a guided tasting led by our expert team, who will share the stories, origins, and characteristics of each product served.

Accompanying the wines is a rich tasting menu, featuring a seasonal selection of:

Fresh and aged Italian cheeses
Cured meats, including prosciutto and pistachio mortadella
Creamy buffalo mozzarella and buffalo ricotta
A variety of vegetables preserved in oil or vinegar
Four types of olives
Three kinds of artisanal bread
Roman-style pizza
Extra virgin olive oil
Honey and jams, carefully paired with the cheeses

Accessibility & Participation: Unfortunately, the venue is not wheelchair accessible Infants are not allowed to sit on laps Infant seats are not available Children must be accompanied by an adult at all times
Allergies & Dietary Restrictions: It is mandatory to inform us of any food allergies or intolerances at the time of booking. Failure to communicate dietary restrictions in advance may result in the inability to accommodate your needs, without any right to refund. Fabullus and its staff are not responsible for any reactions caused by allergies or intolerances not communicated beforehand. Vegetarian and gluten-free alternatives are available upon request when booking.
Timing & Punctuality: Guests must arrive at least 5 minutes before the scheduled start time. Late arrivals (over 15 minutes) will not be admitted, and no refunds will be issued, in accordance with our No Show policy. The start time of the experience may vary by up to 15 minutes for organizational reasons. If you anticipate any delays or issues in attending the experience, please inform our staff as soon as possible.
Booking Policy: Changes to your reservation are not permitted within 24 hours of the scheduled start time. No refunds will be given for late changes. The operator reserves the right to refuse service to guests who are visibly intoxicated or under the influence of substances. If service is denied for this reason, no refund will be granted.
